This recipe is super simple and easy and you can mix and match your favourite winter vegetables to suite your taste!
Ingredients
- 2 Potatoes
- ¼ Pumpkin
- 1 kumara
- Feta
- Spinach
- 3 cloves Garlic
- Olive oil
- Rosemary or your choice of herbs
- Sea salt and ground pepper to taste
Method
- Preheat oven to 190°C. On a lined baking tray, toss the chopped vegetables with oil and season with salt, pepper, rosemary and garlic. Spread vegetables in a single layer.
- Roast the vegetables for 40-50 minutes, or until golden, rotating halfway.
- Allow vegetables to cool slightly and then toss with spinach and chopped feta.
