Chocolate Strawberry Bliss

Chocolate Crust Strawberry Cacao Pie

Ingredients

Crust

¼ cup raw cacao powder
2 cups organic, shredded coconut
7–10 dates, pitted
¼ cup coconut oil
Pinch of sea salt

Filling

2 cups coconut meat, chopped
2 cups strawberries, halved
½ cup raw honey (use less if desired)
¾ cup coconut oil
½ cup date paste (use less if desired)
1 tsp. vanilla extract
Dash of lemon juice

Preparation

  1. In a large bowl, mix all crust ingredients with a wooden spoon until thoroughly combined into dough.
  2. Press the crust evenly into a 9-inch tart pan with a removable bottom, like a spring form pan. Cover with plastic and place in the refrigerator to chill for 1 hour or more.
  3. Blend all the filling ingredients in a high-speed blender until smooth.
  4. Fill the pie shell while the filling is still at room temperature.
  5. Place pie in the refrigerator to set for 1 to 2 hours until the filling is a firm, pudding-like consistency.
  6. Slice and serve chilled.
  7. If you have extra filling, simply chill and eat as a pudding.
